Venditto’s Weekday Breakfast Schedule

As I promised in an Instagram post earlier this week, I’m going to tell you how I keep my school morning running smoothly. Well, as smoothly as possible. I’ve created a breakfast schedule! This way my kids ALWAYS know what to expect and there is rarely any arguing about what they want to have.

Muffin Monday

I keep things simple with a go to blueberry muffin recipe. I’ve tried to switch it up but I always end up going back to this one. It’s PERFECT for my family and they adore it. Below is a GF version and I’ve also included my favorite non GF blueberry recipe. That one was my mom’s and she took it to every summer potluck we went too.

Gluten Free Muffin Recipe

2 Cups Gluten Free Flour
2 Tsp Baking Powder
1 ¼ Tsp Xantham Gum
¼ Tsp Salt

½ Cup Butter Room Temperature
1 Cup Sugar
4oz Dairy Free Sour Cream
4oz Dairy Free Yogurt
1 Egg
1 Tsp Vanilla
1/3 Cup Almond Milk
1 ½ Cup Fresh Blueberries

½ Tbsp Cinnamon
½ Tbsp Sugar

Muffin Batter Baking - Venditto's Weekday Breakfast Schedule

1. Preheat oven to 375. I like to line my muffin tins with silicone cups but feel free to use paper liners.

2. In a small/medium bowl combine the flour, baking powder, xantham gum and salt. Lightly whisk flour mixture with a fork until combined. Set aside.

3. In a larger bowl cream the butter until light and fluffy.

4. Add sugar, sour cream, yogurt, egg, vanilla and almond milk. Beat on medium for 1 minute. Ingredients should be well combined.

5. Slowly add in flour mixture until everything has been combined. Set mixer aside.

6. Add in blueberries and mix with a spatula until everything feels cohesive. Do not over mix.

7. Fill muffin liners with batter. In a small bowl combine cinnamon and sugar. Sprinkle on top of muffins.

8. Bake 25-27 minutes. Voila!

My Mom’s Blueberry Muffin Recipe

2 Cups Flour
2 Tsp Baking Powder
½ Tsp Salt
½ Cup Softened Butter
1 Cup Sugar
2 Large Eggs
1 Tsp Vanilla
2 Cups Blueberries
½ Cup Milk

1 Tbs Sugar
¼ Tsp Nutmeg

1. Preheat oven to 375.

2. Mix 1 Tbs Sugar and Nutmeg together in small bowl. Set aside.

3. Mix together all dry ingredients.

4. Whip butter and add sugar vanilla and egg.

5. Once combined alternately add flour mixture and milk.

6. Pour into a greased muffin pan and sprinkle with nutmeg and sugar mixture.

7. Bake for 25-30 minutes.

8.Let cool for 20 minutes before serving to blueberries set. Enjoy!

Toast Tuesday

I typically give each of my kiddos ½ of a bagel and pair it with an egg cooked to their preference. That’s scrambled for my two youngest and fried for my oldest.

Waffle Wednesday

This is by far the favorite day of the week. My husband travels a lot for work but whenever he can he honestly adjusts his schedule to try to be home for breakfast on Wednesday mornings (smart of me, eh?) My go to gluten free recipe is below for ya!

1 ½ cups of gluten free flour (I prefer Mama’s Almond Blend)
¼ tsp xantham gum
½ tsp salt
2 tsp baking powder
1 Tbsp sugar
3 eggs
1 cup milk (we do coconut but you do you!)
¼ cup canola or vegetable oil
2 tsp vanilla

1. In a large mixing bowl combine flour, xantham gum, salt and sugar. Whisk with a fork to combine and set aside.

2. In a separate bowl mix together the eggs, milk, oil and vanilla. Set aside.

3. Pour liquid ingredients into the flour bowl and mix with wire whisk until combined.

4. Spoon with a ladle onto preheated waffle iron and cook!

Thirsty Thursday

Gotta go with a classic fruit smoothie here. I sneak in some nutrients unbeknownst to them and pair it with a bowl of warm oatmeal. This is Addie’s favorite meal of the week! It might be because of the dollop of whipped cream I treat them with on the top of their smoothie but I’ll keep pretending it’s because of the grapefruit seed extract, chia seeds and spinach leaves I sneak in there.

Strawberries Bananas Smoothie - Venditto's Weekday Breakfast Schedule

1 banana (ideally not frozen but eh, sometimes that’s what I have on hand)
Handful of spinach
1 tsp of chia seeds
3 drops of grapefruit seed extract (boosting their immune system!)
½ cup of frozen cherries
½ cup of frozen blueberries
½ cup of froze strawberries
½ cup of coconut or almond milk (plus more to adjust consistency if necessary)

Blend and serve!

Free for all Friday

They think they have control of this one but in all reality, it’s their cereal day. I hard boil an egg for them and send them on their way. Hallelujah, I made it to FriYAY!
