Homemade Potato Salad

With cookouts in full swing now that Memorial Day is over, I thought I’d share my mom’s infamous potato salad recipe. Everyone who cooks has a recipe that everyone requests when you offer to bring a dish to a family event. My aunt Mary makes the best deviled eggs, my grandmother’s scalloped potatoes are amazing and my mom’s potato salad is the talk of the party. I’ll be honest with you though, it’s impossible to perfectly recreate but I’ll TRY to tell you all of the tips and tricks.

1 small onion
2 stalks of celery
8 red potatoes with skin on
Boil 5 eggs
Celery seed
Parsley
1.5 cups of mayo
2 TBS of sugar
2 TBS of mustard
1.5 TBS of vinegar
1 TSP of oil
1 TSP of water
Dash of salt and pepper

1. Mix first 6 ingredients in a large bowl.
2. In a small bowl mix the rest.
3. Stir together.
4. Let sit for 24 hours (chill) before serving.
